The method normally used to brew Turkish tea is different than the most common way worldwide. In the traditional way, Turkish tea is made by using a double decked tea pot. The lower pot is usually bigger and it is used for boiling water. Tea leaves are put into the upper tea pot, and when water is ready, it is poured from the lower pot into the upper one to start the brewing process. Some hot water remains in the lower pot. The reason follows in the next paragraph. This preparation method allows the tea to be served in different strengths to satisfy different palates. Both pots are used while serving Turkish tea. First the brewed tea is poured from the smaller tea pot into the tulip-shaped tea glasses. Then it is diluted with water from the bigger pot. If someone prefers darker tea then their brew is mixed with less water. This can be adjusted by watching the colour of the mixture which varies from pink to dark, almost black tea.
